Simple, very colorful, and very healthy.
In a medium bowl, put turkey chopped into medium size pieces. Cut grapes into four pieces. Slice celery. Add the almonds. Then, add lemon juice and orange rind to mayonnaise. Mix with turkey and other ingredients.
Arrange on lettuce leaves on a platter.

Wash celery, trim, and slice thin. Blanch celery in 1 cup water until crisp; drain and rinse with cold water. Pour vinegar, cream, salt and pepper to taste over rinsed celery. Chill and serve.
