These little crispy pockets of tuna and cream cheese are an excellent appetizer or side to a meal. I came up with them because I adore crab rangoons, but don't always have those ingredients handy.
My neighbor used to make these for her family once a month when my son was a little boy. She was always so sweet to bring us a ziplock bag filled with the frozen puffs so we could have them too. Beware though, they are very addictive!
Place 1/4 cup margarine and 1/2 cup water in medium saucepan. Bring mixture to a boil. Add pancake mix, stirring until dough forms ball. Remove from heat.
Combine cream cheese, egg yolk, onion, and baking powder in large mixing bowl. Beat until smooth and blended. Add bacon pieces; blend well.
Can be mixed and refrigerated day before serving. Peel potatoes; cook in salted water in large pot until tender. Drain and mash thoroughly.
About 45 minutes before serving spray a large cookie sheet with non-stick cooking spray. Preheat oven to 375 degrees F. In a 2 quart saucepan, over medium heat, heat water and margarine until melted and mixture boils.
