We all want to prepare healthy food for the family. The recipe I'm cooking this morning is simply made of eggs and freshly picked vegetables from our very own veggie plots. It's so easy, but very healthy.
Ingredients:
- 2 large eggs
- 50 g squash, sliced into strips
- 20 g moringa leaves
- 1 g ginger, sliced into strips
- 1 g spring onions, chopped
- 2 large cloves garlic, chopped
- 1 chicken bouillon cube
- 45 g cheese strips
- 4 cups water
- Note:
- You can alternate vegetables with carrots and cabbage.
Steps:
- Beat eggs then set aside.
- Pour 4 cups of water in a pot over medium heat. Bring to a boil.
- Drop the vegetables in the water, except for the moringa leaves.
- Add the bouillon cube, and allow to dissolve as the water boils.
- Simmer until squash is translucent. Add the cheese or you can do this after the egg.
- Stir mixture. Slowly pour beaten egg a little amount at a time as you are still continuously stirring.
- Stir until you see tiny strands of the egg forming.
- Add the moringa leaves and simmer for 1 minute.
- Serve hot!
