When my friends and neighbors don't feel well and have lost their appetite, I take them potato soup. However, you don't have to be ailing to enjoy this cheesy potato soup. It's good anytime.
Total Time: allow an hour
Yield: a little over 2 quarts
Ingredients:
- 2 Tbsp butter
- 1/3 cup finely chopped sweet onion
- 5 cups peeled and diced red potatoes (5 or 6 potatoes)
- 2 14.5 oz. cans ounce cans chicken broth
- 2 cups milk
- 2 cups shredded extra sharp cheddar cheese
- 1/4 tsp black pepper
Steps:
- In a large pot, melt butter over medium heat.
- Add chopped onion and stir until tender. (about a minute or so)
- Add broth and potatoes.
- Cover and bring to a boil. Reduce heat and cook until the potatoes are tender (approximately 10-15 minutes)
- Strain the potatoes and catch the broth. Pour the broth back into the pot.
- Pour the potatoes into a mixing bowl. Add a little of the broth and mash with a potato masher.
- Add the mashed potatoes back to the broth and stir.
- Add the milk, cheese and black pepper,
- Stir over medium heat. When the cheese has melted, it's hot and ready to serve.
- Share with someone to cheer them up or enjoy for a satisfying meal served with a salad. It's also good refrigerated for 2-3 days and reheated for another meal.
