I love these cookies because they're kind of like a cross between caramel apples and warm apple pie. The freshly cooked cubes of apple really stand out under the gooey ribbons of caramel. My family enjoys these warm with vanilla ice cream- it tastes just like fresh apple pie a la mode (without the hard work). Give them a try!

Yield: 16-20 cookies, depending on the size you choose
Ingredients:
- 1 16 oz. package refrigerated sugar cookie dough
- 1/4 cup all-purpose flower
- 1 apple, peeled, small diced
- 3 dashes cinnamon
- 1 dash nutmeg
- 1 dash allspice
- 24 chewy caramel candies
- 2 Tbsp cream or half & half
Steps:
- Preheat oven to 350 degrees F. In a bowl, tear cookie dough up into pieces. Knead in flour.
- Stir in chopped apples, cinnamon, nutmeg, and allspice. Mix well.
- Drop by rounded spoonfuls onto an ungreased cookie sheet. I made mine fairly large, a total of 16.
- Bake for about 15 minutes, until edges are golden. Remove from oven and allow to rest a couple minutes. Transfer to a rack to cool for 15 minutes.
- In a small microwavable bowl or cup, add caramels and cream. Heat on high in bursts of 20 seconds, stirring each time, until you have a smooth caramel sauce.
- Drizzle caramel sauce over cooled cookies.
- Enjoy warm or allow caramel to firm up- won't take long. :)
