Finally, a gluten free cookie I love! I usually don't like gluten free cookies because I can really taste the "gluten free" element, but not in these. They have more ground gluten free oatmeal than flour substitutes, and are packed full of walnuts and chocolate chips.
*If you'd like to make these non gluten free and still absolutely delicious, use 1/2 cup oatmeal (non ground) and 2 1/4 cups all-purpose flour.

Cook Time: 17 minutes
Total Time: 32 minutes

Yay! I know you're awesome with your GF recipes and baking! I've made this a bunch now and a couple of the times, I've felt the need to add a touch more oats to keep it firmer (but not always-- you know how baking goes).
Attosa, those sure do look yummy and gluten free, it doesn't get any better.

I am a peer counselor to those new to allergen free living. I have been allergen free for more than 30 years. I am about fed up. I don't mean to sound harsh, but, PLEASE, IF it has oatmeal in it, IT IS NOT gluten free!
