Yield: 5-6 servings
Ingredients:
- 1/4 cup margarine ($pennies)
- 1/3 cup flour ($pennies)
- 1/2 tsp salt ($pennies)
- dash pepper ($pennies)
- 1 can condensed chicken broth ($1.39)
- 3-4 cups milk ($.25)
- 2 cups cooked, cubed chicken ($1.75-2.00)
- 1/3 cup chopped onion ($pennies)
- 1 cup cooked peas ($.79)
- 1 cup cooked whole baby carrots ($.50)
- 1 (10 count) can biscuits ($1.50)
Steps:
- Heat oven to 375 degrees F.
- In oven proof 10 inch skillet, melt margarine; blend in flour, salt and pepper. Add chicken broth and milk.
- Cook, stirring constantly, until thickened.
- Add chicken, onion, peas, and carrots; simmer until hot and bubbly.
- Separate dough into 10 biscuits. Arrange biscuits over hot chicken mixture.
- Bake at 375 degrees F for 20-25 minutes or until biscuits are golden brown.
