Ingredients:
- 3 rainbow carrots
- 1 butter lettuce
- 1/2 of the whole rotisserie chicken leftover
- 2 Tbsp rice vinegar
- 1 Tbsp yellow mustard
- 1 Tbsp mayonnaise
- 2 Tbsp lemon juice
- dash black pepper
- 5 Tbsp extra virgin olive oil
Steps:
- Prep your ingredients. Chop leftover rotisserie chicken, shred carrots and chop green onions.
- Chop off base of lettuce and separate each lettuce leaf.
- To prepare the dressing add extra virgin olive oil, rice vinegar, mustard, mayonnaise, and lemon juice in a bowl. Mix well.
- Throw all your ingredients into a large bowl (shredded carrots, chopped chicken, diced green onions) and toss well with sauce.
- Ready to fill your lettuce cups with chicken mixture and eat.
