Gold Post Medal for All Time! 677 Posts A great meal for the cooler weather. You could add more vegetables to the dish for a one-pan meal. The peppers and garlic scapes came from the garden.
I used brown rice instead of white, and increased my cooking time to 45 minutes. I also used boneless, skinless chicken thighs.
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

Ingredients:
- 3 Tbsp butter
- 1 cup white rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp oregano
- 1 tsp salt
- 1/4 tsp pepper
- 1 14.5 ounce can diced tomatoes
- 2 cups chicken broth
- 1 package chicken tenderloins, cut into 1-inch chunks
Steps:
- Melt the butter in a large skillet. Toast the rice a few minutes, until it begins to brown.
- Add the onions and peppers, and sauté until the onions begin to soften.
- Add in the garlic, spices, tomatoes and broth, and mix.
- Bring this mixture to a boil. Lower the heat until it is simmering. Add the chicken and cover.
- Simmer for 20 minutes or until the rice is fully cooked.
