The finished Chicken SofritoA great meal for the cooler weather. You could add more vegetables to the dish for a one-pan meal. The peppers and garlic scapes came from the garden.

I used brown rice instead of white, and increased my cooking time to 45 minutes. I also used boneless, skinless chicken thighs.

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

  • 3 Tbsp butter
  • 1 cup white rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 14.5 ounce can diced tomatoes
  • 2 cups chicken broth
  • 1 package chicken tenderloins, cut into 1-inch chunks

Steps:

  1. Melt the butter in a large skillet. Toast the rice a few minutes, until it begins to brown.
  2. Cooking rice in a frying pan.
     
  3. Add the onions and peppers, and sauté until the onions begin to soften.
  4. Adding vegetables to the rice mixture.

  5. Add in the garlic, spices, tomatoes and broth, and mix.
  6. Adding liquids to the rice mixture.
     
  7. Bring this mixture to a boil. Lower the heat until it is simmering. Add the chicken and cover.
  8. Adding chicken to the rice mixture.
     
  9. Simmer for 20 minutes or until the rice is fully cooked.
