I was diagnosed with Celiac in 2009 and could not enjoy eating chicken and dressing with my family until recently when our grocery store started carrying a gluten free stuffing mix. I have prepared it several times and love it. My family likes it too. I have experimented and this is my recipe.
Yield: 6-8 servings
Ingredients:
- 1 pkg. (8 oz.) Gillian's Gluten Free Home Style Stuffing mix
- 2 1/2 lb boneless chicken thighs
- 2 cups chicken broth
- 1/2 cup butter
- 1 1/2 cup Progresso Broccoli Cheese soup
- 1 egg
Steps:
- Cook the chicken and save the broth.
- Pull the chicken apart
- Melt butter
- Add broth and broccoli cheese soup
- Whisk the egg and add to the broth mixture
- Pour stuffing mix into a large mixing bowl.
- Stir broth mixture into the stuffing mix and add the chicken.
- Pour into a 2 quart baking dish
- Bake at 350 degrees for 45-50 minutes until browned.
- Enjoy with cranberry sauce and vegetables.
