Uses those older bananas (I freeze mine until I need them) and avocados that may be past their prime, but still super healthy with boosts from the peanut butter!
Easy and no cooking.
Prep Time: 10 minutes
Total Time: 2 hours freezer & 10 minutes
Yield: 1 dozen
Source: AvocadosFromMexico.com
Ingredients:
- 1/2 cup mashed avocados (not pictured...oops)
- 1/2 cup mashed banana
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- 3/4 cup rolled oats
- 1/4 cup peanut butter
- 1-2 Tbsp honey or maple syrup, optional
Steps:
- Mix the ingredients. I did dry, wet, then more dry since it gets thicker.
- Add the vanilla extract. I also added maple syrup.
- Layer a baking sheet with wax paper then form mixture into a dozen little balls and place on sheet. Freeze at least two hours, then store in a freezer bag for up to 3 months.
- Not too sweet but satisfies your need for a healthier snack with a big boost of protein!
