Our family's Christmas Eve tradition for over sixty years.
Ingredients:
- 10 to 12 cubed red potatoes (can use Russet potatoes too)
- 1 can clams
- 4 to 5 slices chopped bacon
- 1 onion, chopped
- 4 cups chicken broth
- 2 cups milk or cream
- 1/2 cup flour
Steps:
- Wash red potatoes (leave skins on) and cut into cube. Boil until soft. When done, place in strainer.
- Meanwhile, cut bacon with kitchen shears and chop onion. Saute in a Dutch oven until bacon and onion is done.
- Add 1/4 cup flour to bacon and onion and drippings until it forms a paste. Add cream or milk and cook until thickened. Add chicken broth that has been blended with l/4 cup flour. Add to mixture and stir until thickened. Season with salt and pepper.
- Add 1 can clams and cooked potatoes into the mixture and heat through and serve.
