Ingredients:

  • 2 15 oz. cans black beans, rinsed and drained
  • Salt to taste
  • 1 14 oz. can diced tomatoes
  • 1 14 oz. can coconut milk
  • 1 cup vegetable broth
  • 1/2 onion, chopped
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 2 cloves garlic, minced, or more to taste

Steps:

  1. Combine all ingredients.
  2. The soup mixture before simmering.
     
  3. Bring to boil.
  4. Simmer for 35-45 minutes, or until it is as thick as you like.
  5. The soup mixture after simmering.
