This is one famous dessert in the Philippines. We sometimes call this coconut muffin or cupcake. A very simple recipe even your kids can do and I'm thinking of including this in my Valentine day menu.
Ingredients:
- 200 g dessicated coconut
- 1/2 cup brown sugar
- 1/2 cup butter (softened)
- 3 eggs
- 1 can (270 ml) condensed milk
- 1 cup raisins (optional)
Steps:
- Whisk butter until fluffy.
- Add in the brown sugar and continue mixing.
- Drop eggs one at a time as you continue to stir the mixture.
- When eggs are completely combined, pour the condensed milk and stir until well incorporated.
- Fold in dessicated coconut. Incorporate mixture very well.
- Line cupcake pan with cupcake liners.
- Scoop a spoon of the mixture.
- Place in every cup.
- Put raisins on the center top. (optional)
- Bake over 200C for 15 -20 minutes or when the top turns brown. Serve!
