Bronze Post Medal for All Time! 118 Posts Enjoy this tropical dessert! Coconut pudding is made from coconut milk but you can add a twist to it to make it yummier. This is my son's favorite dessert. I put milk because it adds flavor and nutrition.
Prep Time: 5 mins.
Cook Time: 25 mins
Total Time: 30 mins.
Ingredients:
- 4 cups coconut milk
- 2 cups evaporated milk
- 1 cup Nestle cream
- 2 cups cornstarch
- 1 1/2 cup corn kernels
- 1 1/2 cup cheese (cut into small cubes)
- 1 1/2 cup white sugar
Steps:
- In a low heat fire mix all the ingredients coconut milk, evaporated milk, Nestle cream, white sugar and cornstarch. Keep stirring for 15 minutes or until sticky.
- When it is sticky add the corn kernels, and the diced cheese. Keep stirring for another 10 minutes. Make sure you have to left 1/2 cup of corn and cheese for the topping.
- After 25 minutes of stirring (I know its not that easy). Prepare a container for the pudding. Top it with cheese and corn kernels. Put it in the refrigerator for 1 hour, and it is ready to be served.
