Most of the time home cooks use 4 egg yolks and 4 whole eggs in making Leche Flan (commonly known as Custard Pudding with a sweet caramel on top). This is to make the pudding stiff and smooth.
Do not throw away the 4 egg whites separated from the yolks. Here is a simple recipe where you can cook it the same way as the Leche Flan. Aside from the coffee flavor the consistency and texture differs as it is more spongy than the custard pudding.
