I am making lasagna for 70 people in 19 x 11 inch pans. How many pans should I make?
11" x 19" pans are much larger than normal so you may have to do 'special' calculations on your own.
Most recipes call for using a 9" x 13" pan so it appears your pans would be a double recipe that calls for a 9"x13.

As a general rule of thumb, one 13x9 pan will yield 8 medium-sized portions. You can adjust the serving sizes to your needs.

A lot will depend on the gender and age of your guests.
Men - larger and/or more pieces
Women - one to two slices of normal size
Young Children - one to two smaller slices
Most recipes are saying 9'10 pans when using 9"x13" pans.
If that is true, then it would take 5'6 pans of the larger size.
A lot also depends on what sides will be served with your lasagna - if any. Salad?
