Great with soup or chili!
Ingredients:
- 3 eggs, separated
- 2 cups drained canned or cooked corn (not creamed)
- 2 Tbsp. flour
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. butter
- 3 Tbsp. cream
Directions:
- Beat egg yolks, add corn, flour, seasonings, butter, and cream. Blend.
- Beat egg whites until stiff, fold in corn mixture.
- Drop onto hot greased griddle from a tablespoon. Cook until browned. Turn and cook on other side.
