Corn Fritters

Great with soup or chili!

Ingredients:

  • 3 eggs, separated
  • 2 cups drained canned or cooked corn (not creamed)
  • 2 Tbsp. flour
  • 1 tsp. salt
  • Advertisement

  • 1/8 tsp. pepper
  • 2 Tbsp. butter
  • 3 Tbsp. cream

Directions:

  1. Beat egg yolks, add corn, flour, seasonings, butter, and cream. Blend.
  2. Beat egg whites until stiff, fold in corn mixture.
  3. Drop onto hot greased griddle from a tablespoon. Cook until browned. Turn and cook on other side.

Servings: 6
Prep Time: 15 Minutes
Cooking Time: about 3-4 minutes per side
