Gold Post Medal for All Time! 677 Posts Enjoy these wonderful rolls for dinner or anytime. I really liked the combination of dill and onion. Most of the time making this recipe, is the rising time. I used whole wheat flour instead of all-purpose.
Prep Time: 1 hour and 10 minutes
Cook Time: 20-30 minutes
Total Time: 1 hour and 40 minutes
Yield: 12
Source: Family Feasts for $75 a Week
Ingredients:
- 1 Tbsp active dry yeast
- 1/2 cup warm water (not hotter than 110 degrees F)
- 1 Tbsp sugar
- 3 cups all-purpose flour (I used whole wheat)
- 1 Tbsp dried minced onion
- 1 Tbsp dillweed
- 1 tsp salt
- 1/2 tsp baking powder
- 1 cup cottage cheese
- 1 large egg
Steps:
- Combine the yeast, warm water and the sugar in a bowl and let sit for 5 minutes to proof. If the yeast is good, it will foam.
- I a large bowl, mix 2 cups of the flour with the onion, dill, salt and baking powder.
- Add the cottage cheese, egg and yeast mixture. Mix until you have a soft dough.
- Place the dough on a floured surface. Knead for 3-5 minutes, adding flour as needed. Your dough should be smooth, elastic and not be sticky.
- Place in a greased bowl. Cover with a clean towel. Let rise in a warm place for at least 30 minutes.
- Cut the dough in 12 pieces. Shape each piece into a ball. Place on a greased baking sheet. Cover and let rise a second time for 20-30 minutes.
- Preheat oven to 375 degrees F. Bake rolls until golden brown on top, 20-25 minutes.
- Cool on wire rack.
