This is a simple way to lift the average potato salad. I used imitation crab meat, but you can surely use the real thing if you'd like.
Total Time: 30 minutes plus chill time
Yield: 6-8 servings
Ingredients:
- 5 large potatoes, peeled and cubed
- 3 medium pickles, finely chopped
- 1 cup imitation crabmeat, chopped
- 1/4 cup onions, finely chopped
- 3 hardboiled eggs, smashed with a fork
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- salt and pepper to taste
Steps:
- Place potato cubes in a saucepan and cover with water. Bring to a boil over medium-high heat and cook for 15-20 minutes, until tender. Drain.

- In a large bowl, mix together pickles, crab meat, and onions.

- Mix in the potatoes, eggs, mayonnaise, sour cream. Mash with a fork until potatoes are half lumpy, half smooth. Add salt and pepper to taste. Refrigerate for a couple hours before serving.
