Using applesauce in this bread to make it more moist since I used half whole wheat flour and half white flour.

Cook Time: 1 hour
Total Time: 80 minutes
Yield: 2 loaves
Ingredients:
- 2 cups frozen cranberries
- baking spray
- 1 1/4 cup whole wheat flour
- 1 1/4 cup white flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 4 Tbsp softened butter
- 1 cup light brown sugar
- 4 large eggs
- 3 ripe bananas, mashed
- 2 cups applesauce
- 3 tsp vanilla extract
Steps:
- In a bowl, chop the frozen cranberries.
- In another bowl, combine flour, baking soda, and salt and mix. Set aside.
- In a large bowl, cream butter, brown sugar, eggs, bananas, applesauce, and vanilla. Beat at medium speed until thick. Scrape down sides of the bowl.
- Add flour mixture and blend at low speed until combined. Do not overmix. Fold in cranberries and pour batter into prepared loaf pans. Bake in center rack for 60 minutes or until toothpick inserted in center comes out clean.
- Poke holes in top of loaves. Add orange glaze. Orange Glaze: 1 teaspoon orange extract with 1 cup powdered sugar and 2 to 3 tablespoons water. Stir until desired consistency. To make it look like a Christmas loaf, I sprinkled green colored decorating sugar on top.
