Quick, delicious cake-like cookies. Makes around 6 dozen.
Mix first 5 ingredients together either by hand or on slow by mixer. Add beaten eggs, mix then add milk and vanilla. I had purchased some pineapple cream cheese and didn't care for it on bagels so I used it in my cookies. If you have a flavoring to match like I did, pineapple flavoring, it makes a nice change to a plain cookie.
Bake at 375 - 400 degrees F. I bake mine at 390 degrees for 10 minute just until they start to go golden. They will dry out if baked to long. Remove from hot cookie sheets right away, cool and frost.
Frosting: Mix to a spreading consistency that you like, glaze or stand up frosting. These cookies are good without frosting.
