This is a healthy, hearty soup with a great flavor!
Ingredients:
- 1 lb. fresh broccoli, cut in small pieces
- 1/4 cup chopped celery
- 1 small onion, chopped
- 1 cup water
- 1 (18 oz.) can chicken broth
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- 2 cups half and half or low-fat milk
- 3 Tbsp. flour
- 1 tsp. lemon juice
- 3 Tbsp. Parmesan cheese
- lemon slices
Directions:
- Combine first 7 ingredients in 2 quart microwave-safe casserole; cover with casserole lid. Microwave on high for 15-17 minutes or until vegetables are tender.
- Pour mixture into blender container. Process at medium speed until smooth. Return mixture to casserole.
- Combine half and half and flour in medium bowl; mix until smooth.
- Stir into broccoli mixture.
- Microwave on high for 9-10 minutes or until mixture boils and is thickened, stirring 2-3 times.
- Stir in lemon juice and Parmesan cheese.
- Garnish with lemon slices.
