Chicken in salted egg isn't a new recipe. But in our family, no one has ever tried to prepare this dish in one of our meals. So I decided to try and see if majority of the household would like it.
Supplies:
- Fried Chicken
- 500 grams chicken wings (cut)
- 1/2 cup flour
- 1/4 cup cornstarch
- pepper and salt or powdered seasoning
- Salted Egg Sauce
- 2 pcs salted egg
- 1 cup evaporated milk or all purpose cream
- 1/4 cup butter
- minced garlic
- spring onions (optional)
- spinach (optional)
Steps:
Fried Chicken
- Combine flour and corn starch then divide them into two portions. Coat chicken with one portion of the mixture, add salt and pepper. For the second portion of the flour mixture, add 1/4 cup water and mix until dry ingredients are dissolved. The consistency should be thick and runny, just like a pancake mix. Roll coated chicken into the wet batter.
- Fry them over medium heat until crisp and golden.
- Set aside fried chicken.
Creamy Salted Egg Sauce
- Mash the salted eggs. It will be easier with a meat grinder.
- Melt butter in a pan.
- Add in the minced garlic and saute until slightly browned.
- Now, add the mashed eggs. Continue stirring the mixture.
- Pour milk or all purpose cream over while continuously stirring. Add some greens such as spinach (optional).
- When the sauce gets a thick consistency, toss in the fried chicken. Keep tossing until the chicken wings gets completely coated.
- Serve hot and top with slices of spring onions (optional).
