Diamond Post Medal for All Time! 1,246 Posts This is an awesome and super easy-to-make flavourful whole roast chicken. I think the secret to its success is cinnamon in the marinade, along with a sprinkle of it on top before it goes in the oven. Try this chicken out with my Mediterranean garlic sauce, recipe attached below.
Prep Time: 10 minutes, plus time to marinate
Cook Time: 1 hour

Ingredients:
- 1 5- lb whole chicken
- 1 lemon
- 1/2 cup vinegar (red wine or apple cider)
- 8 cloves garlic
- 1/4 cup olive oil
- 2 tsp salt
- 2 tsp ground cumin
- 2 tsp ground cinnamon
Steps:
- To make the marinade, place juice of lemon, zest of lemon, vinegar, garlic, oil, salt, 1 tsp. cumin, and 1 tsp. cinnamon in a food processor or blender and puree until it's smooth.
- Poke a bunch of holes in the chicken and lift up the skin with your fingers. Pour the marinade all over the chicken, making sure to get it in the punctures and under the skin.
- Cover and refrigerate for 2 hours, up to overnight. Preheat oven to 400F. Sprinkle chicken with remaining 1 tsp. cumin and 1 tsp. cinnamon. Add a bit of salt and freshly ground pepper all over. Bake in oven for about an hour (20 minutes per pound). To achieve a crispier skin, broil for the last 5 minutes.

It was super good! I did not have time to marinate overnight this time, and it still came out great. :)
