You dont need the canned broth if the chicken is cooked in water it makes its own broth
I'm not sure what the point of this is since the chicken is already cooked, and you're using canned chicken broth. So it's hardly homemade soup. You might as well just open up a can of Campbell's Chicken Noodle Soup. In fact, that's what we did in college. Open up a can of soup and dump in whatever leftovers we had, or whatever produce the supermarket was throwing out.
Made this soup again yesterday. I love that I can use up left over chicken from a previous meal. I also like that it's made in the crock pot so it's almost ready when I get home from work.

I totally agree with bryguy what would be the point of using a crock pot if you've already cooked the chicken? I could see cutting up the raw chicken and cooking it in the crock pot then you'd get the flavor of it's natural juices.
I too use Ramen from time to time but I keep a large bag of my favorite frozen vegetables in the freezer. When I want a fast bowl of chicken soup I take out some of the frozen vegetables and simmer in a little water for a minute or two. Then I add Ramen noodles and proceed to follow the instructions on their pkg. You can improvise anyway you want - go ahead and throw in your leftovers - it's quick & delicious.
