This recipe is gluten free. It's good left over and the last little bit served on a bed of rice. None is wasted at our house. This is one of our favorites to have for dinner.
I use Swanson Beef Broth and Herb-ox Beef Bouillon Cubes. These are the only brands of broth and bouillon cubes I have found that are gluten free.
Ingredients:
- 1 1/2 lb lean stew beef
- ½ cup gluten free Bisquick (approximately)
- 1 can (14.5 oz) Swanson Beef Broth plus 1/2 cup water
- 2 Herb-ox Beef Bouillon Cubes
- 1 1/2 Tbsp corn starch
- 2 Tbsp Crisco vegetable shortening (approximately)
- 5 or 6 red potatoes
- baby cut carrots
- 1 onion
- salt & pepper
Steps:
- To prepare gravy mixture, pour beef broth into a sauce pan. Add 1/2 cup of water and 2 beef bouillon cubes. Dissolve corn starch in ¼ cup of cold water. Add to broth. Heat on medium-low while preparing other ingredients. Stir frequently.
- Chop onion.
- Peel potatoes and cut in half or quarters for large potatoes. Place in crock pot. Add carrots. Salt and pepper to taste.
- Use Gluten Free Bisquick sparingly as it is not cheap. Put a little Bisquick in a container with a top.
- Shake portions of the stew beef pieces in the Bisquick until it is well coated.
- Heat enough Crisco in frying pan to coat the bottom well. Stir stew beef in the hot Crisco until all is slightly browned.
- It will stick so just scrap up the crumbs and add to the crock pot. Repeat coating and frying of the remainder of the stew beef.
- Pour gravy mixture over the stew beef and vegetables. Stir it all together.
- Cook in crock pot on high for 4 to 4 ½ hours or until stew beef is tender. During the cooking process, stir once after cooking for 2 hours.
- This is good for several days. I put the last serving on a bed of rice, heated it in the microwave and had it for lunch.

This has got to be good. A lot of people don't know just how much more flavorful stews will be if the meat is browned first. This is one of the first things I will be cooking when my new stove is set up.

Let us know how it turns out. I'm sure you can use regular flour, beef cubes and broth. I would still make the gravy with cornstarch.
I have to have it gluten free so I can't test it to see how that would be. Wish I could.
