Total Time: 6-8 hours
Yield: 8 servings
Ingredients:
- 4-5 lb boneless pork shoulder
- 2 medium yellow onions, thinly sliced
- 4 garlic cloves, finely chopped
- 1 cup chicken stock
- 1 Tbsp dark brown sugar, packed
- 1 Tbsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp ground cinnamon
- 1 Tbsp kosher salt
- 2 cups barbecue sauce
Steps:
- Put onions and garlic into the crockpot, spread out evenly.
- Pour in chicken stock.
- In a small bowl, combine brown sugar, chili powder, salt, cumin, and cinnamon.
- Put the pork on a plate and use paper towels to pat it dry. Sprinkle the seasoning mixture onto the meat and rub it on.
- Put the meat into the crockpot on top of the onions.
- Cover and cook on HIGH for 6-8 hours or LOW for 8-10 hours. It is done when it can be pulled apart with a fork.
- Turn off crockpot and carefully remove pork. Place it onto a plate.
- Using a mesh strainer, remove the onions from the liquid from the crockpot. Discard the liquid.
- If necessary, remove the bone and any fat from the pork. Place the pork back into the crockpot. Add the onions.
- Using a fork (or two) pull the pork.
- Add your favorite BBQ sauce, combine well.
- Serve on buns. Enjoy!
