Perfect platter to bring to a party! We brought this to a Mother's Day party recently.
Prep Time: 35 minutes
Cook Time: 20 minutes
Total Time: 55 minutes
Yield: Party 15+
Ingredients:
- 4 lb shrimp with heads
- 6 jalapeños
- 1/2 cup tapioca flour
- 3 cups vegetable oil
- 6 cloves garlic
- 1 Bunch green onions
- 2 tsp salt
- 1 tsp sugar
- 1 tsp black pepper
Steps:
- Wash green onions and jalapeños. Dice thinly.
- Wash shrimp throughly with salt water and pat dry.
- In a bowl put all the shrimp. Add salt, sugar, and flour. Toss the shrimp for a few minutes. Allow the shrimp to marinade for 1/2 hour at room temperature.
- Using a large pan, on medium heat, add oil. Crush in the garlic cloves. Fry until golden. Deep fry the shrimp for 15-20 minutes or until crispy and golden.
- Then add the green onions and jalapeños in the pan. Immediately take out and allow the shrimp to drain any excess oil on paper before putting it into a foil tray.

This sounds good. I think I'll try it as fried is the only way I eat shrimp. OK if I decapitate and eviscerate the shrimp?

Yes you can cut off the head of the shrimp :)
