Diamond Post Medal for All Time! 1,298 Posts An easy to make side dish that pairs well with any Asian meal. You get a nice crunch and some spice (you can adjust the spice level depending on your preference).
Prep Time: 25 minutes
Cook Time: Set aside 12 hours
Total Time: Overnight
Yield: Side dish 2-3 people
Ingredients:
- 1 cucumber
- 1 Tbsp salt
- 1 Tbsp apple sauce
- 2-3 cloves minced garlic
- 1 tsp fish sauce
- 2 Tbsp Korean red pepper powder
- 1 Tbsp sugar
Steps:
- Chop cucumbers into your desired size.
- Place cucumbers in a bowl and mix with salt. Allow cucumbers and salt to marinate for 15-20 minutes.
- Meanwhile you can make your kimchi sauce. In a bowl, add korean red pepper powder, minced garlic, apple sauce, sugar, fish sauce and mix well.
- Try to scrape off some salt from the cucumbers. Then add kimchi sauce into bowl and mix.
- Allow cucumber kimchi mixture to sit at room temperature for 12 hours - overnight then into the fridge. Serves best chilled.
