Does anyone know the proper way to prepare black walnuts before cracking them? We have two black walnut trees and this is the first year they are producing.

They must be dried first before shelling. We have several black walnuts trees. After they are gathered, lay them out as flat as possible, we use an old door. The green outer skin will turn brown and get much thinner.
Then we use an old hand-cranked corn sheller and run them through it. It takes off most, if not all the outer shell. Continue drying for a couple of weeks then crack on a hard surface and pick out the "meat". If the nuts don't come out easily, continue drying, they are not dry enough. Enjoy.
