Curried Okra and Potatoes

Curried Okra and Potatoes on plateThis is a tasty meal that also has some great health benefits. I love okra for many reasons, and one of them being it's great for blood sugar levels. The turmeric in this dish is also fantastic for it, too. I hope you give this dish a try.

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 4 servings

Ingredients:

  • 2 medium potatoes, peeled and cubed
  • 1 small onion, chopped
  • 3 cups okra
  • salt and pepper
  • 3 cloves garlic, minced
  • 1 Tbsp curry powder
  • 1/2 tsp turmeric powder
  • 1 Tbsp butter

Steps:

  1. In a microwave-safe bowl, cover potatoes with water and microwave on high for 4 minutes. This will partially cook them and remove some of their starch.

  3. While the potatoes are going, heat a large greased pan over medium heat. Add onions and cook for 4 minutes.

  5. Drain potatoes and add to pan. Add okra. Cook for about 8 minutes, stirring occasionally.

  7. Add salt and pepper. Add garlic. Cook for a few minutes.

  9. Add curry powder, turmeric, and butter. Cook until potatoes are golden and okra is cooked through. Add salt and pepper to taste.

okay - I have always trimmed at least some of the hard end of the okra but you do not..
Does it still turn out okay and all edible?
This sounds like a good way to use okra and I do like it - best fried but have to try and stay healthy so this is a better way as I do get tried of okra and tomatoes but you probably have an excellent recipe for even that old standby.

Haha! You should go ahead and trim if that's what you do. The story to why I keep it intact is I absolutely hate when the innards leak out because it changes the consistency of the dish by a lot. When I eat it, I don't eat that part. :)

I am sure you can trim them perfectly without cutting in, but I often do and then I lose an okra! ;)

That's the reason I'm asking about your 'method' as I'm never too old to change my 'ways'. I just have always cut some off and occasionally - as you say - one or two open and almost ruin the dish.
