Sweet potatoes are creamy and delicious on their own, but make for an excellent addition to soups when pureed. They are high in dietary fiber and are an excellent source of natural vitamins. Cooking them with curry powder really ups their game. I hope you try this luscious soup!

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Ingredients:
1 Tbsp butter
1 large onion, peeled and chopped
1 Tbsp curry powder
1 lb sweet potatoes, peeled and chopped
1/2 lb carrots, peeled and chopped
6 cups chicken or vegetable broth
1 apple, peeled and chopped
1 Tbsp honey
salt and pepper to taste
Steps:
Heat butter over medium heat in a large pot. Add onions. Cook for about 8 minutes, stirring frequently. Stir in curry powder and cook a couple more minutes.
Add the sweet potatoes and carrots. Cook a few minutes, stirring frequently.

Add the broth and bring to a boil. Cover, lower heat and simmer for about 25 minutes.
Stir in apples and honey. Cook for a few minutes.
Use an immersion blender (or transfer to a blender) and puree until soup is smooth and creamy. Salt and pepper to taste. Serve in bowls with a hint of cream and sprinkle of curry powder, if desired.
Heat broiler. In Dutch oven combine cauliflower, coconut milk, broth, curry powder, and the 1/4 cup cilantro. Bring to boiling over high heat. Reduce heat to medium-low.
The spices can be adjusted to your individual tastes. In large pan cook onion, garlic, and curry in the butter or margarine for a few minutes until onion is tender.
