My leather sofa is Sahara color (spice). My walls are a linen colour. The rest of the furniture is in various shades of brown. What colour should my curtains be?

You have a very neutral pallet, and could go with just about anything. If you want to make the room look bigger, choose a pale shade of brown/tan, or even linen to match the walls, and go with floor to ceiling drapes.
If you are looking for a splash of colour, you could go with patterns that have an accent colour - soft blue, soft orange, or greens with some of the browns that you have in other areas of the room. You might then add an accent chair or cushions on the sofa in your accent colour. I prefer a very neutral background, so I would go with linen coloured drapes, myself.
