I often make chili with ground turkey. However, we recently had some leftover sliced turkey from a wedding reception. I came up with this quick chili recipe when trying to think of some ways to use up some of the leftover deli sliced turkey.
Ingredients:
- 1/2 medium onion, chopped
- 2 cans tomato soup
- 3 cans beans (I used chili beans, seasoned black, and chipotle pinto), including liquid
- 4 cups deli turkey, chopped
- 1/2 cup salsa
- 1 Tbsp vegetable oil
- 1/4 - 1/2 tsp. garlic powder
- 1 Tbsp. chili powder (more if you like it spicier)
- Optional: cooked pasta

Directions:
- Chop onion.

- Cook onions in oil until slightly translucent.

- Add other ingredients and stir.
- Bring to a high simmer.

- Cover and reduce heat.
- Cook for 20 -25 minutes, stirring often to prevent sticking.
- Serve either alone or over a bed of cooked spaghetti.
