Silver Post Medal for All Time! 293 Posts Cheap doesn't have to be boring! This is one of my family's favorite dinners. Not only is it inexpensive, but it is quick, easy and healthy. In about an hour, you will have a fantastic, fresh meal. Truthfully, these beans are tasty enough to eat alone. But with a few added ingredients, they are even better! Enjoy.:)
Total Time: About 1 hour
Yield: About 10 servings

Ingredients:
- 3 cups dry black beans
- 10 cups water
- 1 Tbsp salt
- Lettuce
- Tomatoes
- Salsa
- Sour cream
- Black olives
- Shredded sharp cheddar cheese
- Tortilla chips
Steps:
- In a large stockpot, combine 10 cups water with 3 cups rinsed and sorted black beans. Add 1 Tablespoon salt. Bring to a boil. Let simmer 45 minutes to 1 hour, or until tender.
- Ladle a generous scoop into your bowl. Eat as is, or...
- Chop lettuce, whatever tomatoes are on sale this week, and olives. Layer with sour cream, salsa, and cheese. Other items that would go nicely would be avocado slices or green onions. Surround your dish with tortilla chips, and enjoy your tasty, healthy dinner!
