Dinner in a Pumpkin

Ingredients

  • 1 small to medium pumpkin
  • 1 chopped onion
  • 2 Tbsp. vegetable oil
  • 1 1/2 to 2 lb. ground beef
  • 2 Tbsp. soy sauce
  • 3 Tbsp. brown sugar

  • 1 can sliced mushrooms
  • 1 can cream of chicken soup
  • 1 1/2 cups cooked rice
  • 1 can sliced water chestnuts, drained

Directions

Saute onion until tender; add beef until browned (discard grease). Stir soy, sugar, mushrooms, and soup into mixture; simmer for 10 minutes. Add chestnuts and rice. Place mixture into a cleaned out pumpkin. Bake at 350 degrees F for 1 1/2 hours until pumpkin is tender. Put pumpkin on a serving plate. Remove top and serve meal from pumpkin. For the vegetable, scoop out cooked pumpkin and serve.

Someone had sent in a recipe for, "dinner in a pumpkin". Can anyone who has it please post it or send it to me as I have lost my copy. Thanks very much!

Savory Stuffed Pumpkin
Make a rice/ground beef or ground deer stuffing: 2 cups rice (prepared per pkg); 1 lb ground meat (cooked); 1 onion (chopped); 1 t. ground sage; salt & pepper. Mix all together.

Clean out pumpkin (small sugar pumpkin); save seeds to roast. (one pumpkin per person)
Put stuffing into pumpkin. Top back on.
Place in baking dish with 1 inch of water. Cover well with foil.
Bake in 350 over for 1 hour. Test for fork-tender done-ness.
Pumpkin will be edible, sweetness with savory stuffing! Yummy!
