My 1 year old Staffie cross Shar Pei has recently started weeing and pooing on our rug. I think it may be because she has had less walks, but I took her on a really long walk today and we came back and she peed and pooed on the rug. What shall I do to stop this?

I would take her to the vet to make sure there is no urinary tract infection. Your dog needs to be walked at the same time each day.
Since this seems to be a current behavior change it may be good to spend some quite time with her after a walk as this does sometimes help. Be sure to clean the rug area thoroughly or she will go right back even if she goes outside.
Is there any way to make this particular area off limits for a while? That will deter her and maybe also give her a toy or small treat when she has been a good girl. Everybody likes to be told they did a good job and we love em'!
I am sorry to hear about your dogs problem. First I agree with the previous answer and would just like to add a few more thoughts.
First clean the rug thoroughly and use a steam cleaner to remove everything.
Second, until you discover the problem place a puppy pad in that area. This will protect your carpet while you figure things out.
Third, be sure the schedule stays the same. Dogs can not change their routines quickly like we can. Also be sure when you are walking you stop often to give time to potty. Then when the dog does potty be sure to praise them.
