Put an offer in Freecycle or Craigslist and you will get plenty of takers.
You can call local day care or schools that might want to use the fabric for projects or crafts.

maybe you could make some phone calls to your local church thrift stores or Hospice Thrift store and ask if they could use them. These are usually very good places to donate and they are noted for helping regular people.
I wish I lived closer I am in serious need of fabrics for lap quilts for the local nursing home residents.
