You can call some schools if they want the fabrics for arts and crafts

I'm assuming you mean Southampton, NY but if this is incorrect most of the suggestions will be the same anywhere in the US.

Hospice thrift stores are good places to donate but it is always best to call first to make sure they can use your items.

Church thrift stores also make good use of fabrics.
