I would check with some women's shelters in your area. They are always in need of material for the women that come there. There is also organizations like the Girl Scouts that do project for children's hospitals and other organizations. You can put an annoyance in Craigs List for a non profit organization and have them contact you.
You can call any of your veteran organizations and see if they can give you a list as they have access to a lot of information. Also, Lion's Club, Salvation Army, Hospice Thrift stores and locate a local quilters club as many of these make quilts for worthwhile projects.

I make afghans, fleece blankets, etc, for Project Linus and they accept donated fabric and yarn. The quilts these ladies make for children are beautiful.
You can check with senior citizen centers and Boys and Girls Clubs.
