Pumpkins aren't just jack 'o lanterns! They are one of the healthy vegetables for us.
Now that my children are adults I don't necessarily carve my pumpkins that I grow for decorations and if I do want to decorate them, I will use paint instead of carving to give them double purpose.
But some folks use their pumpkins even if they carved them previously and say that even a soft freeze doesn't do them in, if you grab them soon enough after!

Thank you for the article. I cook pumpkins every year for my Thanksgiving pies and my family says they are much better tasting. I've never tried the crock pot method, but now I will. I've had better luck boiling my pumpkin than baking it. You do have to let them sit in a mesh colander and let the excess water drain out or the pumpkin isn't thick enough for recipes. Besides pies I make soup, pumpkin bars, cookies, pancakes and more. It's a good idea to freeze the extra to use throughout the year! Enjoy!
