Thinly slice 4 large apples (I thought Gala and Golden Delicious worked well together.) Place in a microwaveable dish, sprinkle with cinnamon, and place a lid on top. Nuke 4-5 minutes, depending on your microwave. (I cook them for 5 minutes). You can add some dried cranberries or raisins, and a sprinkle of lemon juice will add some 'zip' to your dessert. (A nice big dollop of Cool Whip is really good also!)
This is simple dessert, but great for busy Moms or if you're caught with nothing baked for company that arrived a little earlier than expected!

I appreciate the fact that this recipe has no sugar. Most baked apple recipes are so loaded down with sugar that it pretty much cancels out the point of eating the fruit in the first place.
