Crusty Bread
3 C all purpose flour
1 3/4 t salt
1/2 t yeast
1 1/2 C water
You will need a large cast iron pot with a lid.
In a large mixing bowl, whisk together the dry ingredients. Add water and mix until a shaggy mixture forms. Cover the bowl with plastic wrap and set aside for 12 - 18 hours. Over night works well. Heat the oven to 450 degrees. When the oven has reached 450 degrees, place a cast iron pot with a lid in the oven and heat it for 30 minutes.
Cover with plastic wrap and let set while pot heats. Remove pot from oven, drop in dough. Cover pot and return to oven for 30 minutes. After 30 minutes, remove covr and bake 15 minutes more. Remove bread and put on cooling rack. Makes one large rustic loaf.
