I try to keep cake mix on hand so if I need to take something to someone quickly, I can always pull out this recipe and make it up in just a few minutes!

Mix ingredients together until smooth. Roll into 1 inch balls and place on a lightly greased cookie sheet. Use the bottom of a drinking glass to flatten slightly. Bake at 375 degrees F until the tops crackle (8-10 minutes). Cool and frost if desired.
(I have added nuts, chocolate chips and sprinkles before. You can use your own imagination! Our favorite is the chocolate with pecans with chunky chocolate in them. The strawberry also makes up good with the cream cheese icing in the tub.)

These cookies are fantastic! I used a Devils Food cake mix with powdered sugar on top. My husband and kids are "sweet-aholics" and seem to need their "fix" every evening after supper. This a very easy way to make a fantastic cookie in just a few minutes. After working all day, quick recipes like this one are very much appreciated. I am anxious to try different flavors! I made these cookies last week and added 3 cups of quick oats, a cup of raisins, and about 3T of milk, made the best oatmeal raisin cookies you ever tasted. I used a spice cake mix, but think the next time I make these, I will put in a teaspoon or so of pumpkin pie spice to jazz them up. (03/25/2005)
