Gold Post Medal for All Time! 555 Posts Caught unexpectedly without mayonnaise I had to whip some up quickly. I was surprised how easy and delicious it was!

Total Time: Approximately 5 minutes
Yield: about a cup.
Ingredients:
- 3/4 cup mild, flavorless oil (I used vegetable)
- 1 tsp dijon mustard
- 1 tsp salt
- 1 room temperature egg yolk
- 1 tsp lemon juice
Steps:
- Simply add the room temperature egg yolk, salt, mustard and lemon together in a big bowl and whip it until frothy. Took me about a minute.
- Slowly add in a little oil at first, mixing it together for a minute, then adding more, as a light stream while continuing to whip until it is light and fluffy.
- 5 minutes tops!

I learned how to do this in a cooking class. It's far better than the store-bought.
