Combine 1 cup sugar, I cup peanut butter and 1 egg. Mix well, roll into 1 inch balls and flatten with a fork. Bake at 350 degrees F for about 10 minutes (do not wait for them to start to brown or they might burn). Use a non-stick baking sheet. Moist, chewy and yummy!

I made this cookie and it is wonderful. The only thing I had to bake it for 20 minutes for it to set. Other then that they are wonderful, moist and chewy. (07/12/2008)
