Bronze Post Medal for All Time! 162 Posts This is a super easy and amazingly delicious cake that we usually make in a bread loaf pan (although cupcakes will do).
Ingredients:
- 1 box lemon cake mix (plus ingredients called for in cake mix)
- 1 (3.4 oz) box instant lemon pudding mix
- 1/2 cup poppy seeds
- 1 cup powdered sugar
- lemon juice, to taste (I used the juice from 1/2 of a large lemon)
Steps:
- Pour powdered cake mix and powdered pudding mix into a bowl.
- Add ingredients called for in cake mix and 1/2 cup poppy seeds (more or less, to taste). Stir.
- Pour cake mix into 2 greased bread pans, cake pan, or muffin pan (I really like silicon muffin cups because they're non-stick).
- Bake 18-20 minutes. Remove from oven and allow to cool.
- Mix powdered sugar and lemon juice to make icing. Add more lemon juice for more sour icing and less if you like sweeter icing.
- Poke holes in the lemon cake and pour 1/2 the icing over the top. Allow to absorb into the cake. Continue pouring just enough icing over top to coat and allow to soak in, repeating until icing is all used.
