Gold Post Medal for All Time! 677 Posts I have an abundance of cucumbers this season, and will be trying all different kinds of recipes. This one was so fast and easy-no canning required. I think I will be making these a lot.

Cook Time: 0 minutes
Total Time: 5 minutes
Yield: 1 quart
Ingredients:
- 1 qt jar
- 1 large cucumber, sliced into rounds or spears
- 1 1/2 cup water
- 3 Tbsp white vinegar or apple cider vinegar
- 1 1/2 Tbsp kosher salt
- 2 tsp black peppercorns
- 5 cloves garlic, peeled
- 6 large sprigs fresh dill
- 1 bay leaf
- 1/2 tsp (optional) crushed red pepper flakes, or more/less to taste
Steps:
- Add the water, vinegar, salt, peppercorns, garlic, dill and bay leaf to a 1-quart jar. Stir to combine.
- Add the sliced cucumbers to the jar.
- Put the lids on the jar and shake to combine.
- Refrigerate for at least 2 days. Will keep a week in the refrigerator.

For 1 large cucumber, there is only 1 1/2 cup of water. Is this enough liquid to cover the cucumber?
